Sopa De Lima Con Pavo ( Turkey Lime Soup)

Ingredients

3 Gallons TURKEY STOCK

1 oz garlic clove

1 Bunch cilantro

1 tbsp cumin

12 6-inch soft tortillas

5 limes

6 avocado

12 Whole cloves

1 tbsp dry leaf oregano

6 oz butter substitute

2-1/2 lbs yellow onion

2-1/2 lbs green pepper

10 lbs tomatoes, peeled and seeded

12-1/2 lbs TURKEY, cubed, 3/4 inches x 3/4 inches

3 c fresh lime juice

Directions


 



Bring stock to a boil. Add garlic and cilantro and simmer 20 minutes. Strain stock.


Toast cumin, clove and oregano in a skillet until fragrant, approximately 2 minutes. Place toasted herbs and spices along with 1/2 cup stock in a blender and process until smooth. Add to rest of stock.


Chop onions, green peppers and tomatoes. Cube avocados. Slice each lime into 10 slices. Slice tortillas into strips.


Heat butter substitute in stock pot; add onions and saute 3 minutes. Add turkey and saute 6 additional minutes. Add green peppers and saute 2 minutes.


Bring stock to simmer. Add sauteed turkey/vegetable mixture along with tomatoes. Return to a simmer. Add lime juice and simmer 15 to 20 minutes.


Serve garnish with lime, avocado and tortilla strips.
