South Beach Seared Cuban Turkey



48 oz Cuban Mojo Slow Roasted Turkey

4 limes, juiced

24 oz saffron rice

8 oz red bell pepper, seeded and finely diced

24 oz black beans, drained and rinsed

16 oz fried plantains, frozen or fresh, cooked and held warm for service

As needed green onions, as garnish

As needed cilantro, as garnish

As needed lime wedges, as garnish


Sprinkle lime juice over turkey and toss gently.

Pan sear turkey in a sauté pan over medium-high heat until lightly browned.

Prepare saffron rice and add red bell pepper.

Heat beans thoroughly.

Layer beans, saffron rice and turkey in cornhusks for a dramatic presentation.

Garnish with fried plantains, green onions, cilantro and fresh lime wedges.
