Ingredients

18 Large eggs, beaten

24 Links (or 24-oz) precooked TURKEY SAUSAGE links, cut into 1/2-inch pieces

1 c salsa or picante sauce

3 oz unsalted butter

12 (6 to 8 Inch) flour tortillas, warmed

3 c (12 oz) shredded Cheddar cheese

6 tbsp cilantro, chopped

Directions

Combine eggs, turkey sausage and salsa until well blended. Set aside.

Melt butter in a large sauté pan over medium heat.

Pour the turkey-egg-salsa mixture into sauté pan. Scramble to desired consistency.

For each wrap, place approximately 2/3 cup egg mixture onto one warm tortilla. Sprinkle each with 1/4 cup cheese and 1-1/2 teaspoons cilantro.

Roll up, tightly, burrito style.
