1 lb LEAN GROUND TURKEY
1/4 c chopped onion
2 Cloves fresh garlic, minced
32 oz frozen cubed hash browns, thawed
10 oz enchilada sauce
8 oz tomato sauce
4 oz canned diced green chilies, drained
1 tbsp reduced-sodium taco seasoning
Nonstick cooking spray As needed
4 oz shredded Mexican cheese blend
In a large, heavy skillet, cook turkey and onion together until all pink disappears from the turkey. Add garlic and sauté only until fragrant.
Stir in thawed hash browns, enchilada and tomato sauces, chilies and seasoning. Combine well.
Spray a 3-quart casserole dish with nonstick cooking spray. Spoon turkey mixture into casserole dish. Cover dish.
Bake in a preheated 375 degree F oven for 30 minutes. Remove cover and sprinkle with cheese. Return pan to oven and bake an additional 5+ minutes or until the cheese is melted and the internal temperature of the casserole reaches 165 degrees F.
Allow to stand 5 minutes before serving.
