1/4 c heavy mayonnaise

1-1/2 tbsp coarse grained mustard

2 oz corn kernels

2 oz mixed red and green peppers, seeded & diced

3 6-inch cornmeal crepes

6 oz COOKED TURKEY, flavored with southwestern seasonings

2 oz pepper jack cheese, grated



Mix mayonnaise and mustard together. Cover, chill and reserve the sauce.

Blend corn and diced peppers together to make relish.

Place crepes on a flat surface. Spread each with corn relish. Divide turkey slices in three portions and top each crepe with 2-ounces turkey.

Cover lightly with mayonnaise-mustard sauce. Roll up each crepe.

Top the crepes with cheese and broil until cheese is melted and mixture is hot.
