2/3 c fresh lime juice

1/4 c fajita seasonings


3 Medium yellow onions

2 Large red peppers, seeded

3 Large green peppers, seeded

2 Large yellow peppers, seeded

1/3 c olive oil

1/4 c fresh cilantro, rough chop

Salt and pepper To Taste

50 8-inch flour tortillas

2 c salsa, prepared

2 c guacamole, prepared

2 c Cheddar cheese, shredded

2 c sour cream

Lime wedges As needed

Cilantro sprigs As needed



Mix lime juice and fajita seasonings together. Marinate turkey cutlets in lime juice mixture for 30 minutes.

Cut onions, green peppers, red peppers and yellow peppers into thin strips.

In large saute pan, heat olive oil and saute onions for 3 to 4 minutes. Add pepper strips and saute for 3 minutes.

Remove from heat and stir in cilantro, salt and pepper. Hold warm for service.

On a preheated grill or broiler, cook turkey cutlets 3 minutes per side or until cooked through. Cut into strips.

For each serving, portion about 1/2 cup pepper mixture and 4 ounces of turkey strips with 2 warm tortillas.


Top with salsa, guacamole, Cheddar cheese and sour cream. Garnish with lime wedges and cilantro sprigs.
