2 lbs ITALIAN TURKEY SAUSAGE
3 tbsp olive oil
1 lb GROUND TURKEY
1 #10-Can spaghetti sauce
1 tbsp dried oregano
1 tbsp dried basil
Salt and pepper As needed
1-1/2 lbs vermicelli
3/4 c Parmesan cheese, grated
Cut through the outer casing of the sausages and discard casings. Heat oil. Break up sausage and brown in hot oil.
Add ground turkey to pan and sauté over medium-high heat. Cook until turkey is no longer pink. Drain any fat.
Add spaghetti sauce and herbs. Reduce heat and simmer gently.
Adjust seasonings. Cover and hold for service.
Cook vermicelli according to directions and hold for service.
For service: Dip each pasta portion (held in china cap) into boiling water. Heat for 20-30 seconds. Ladle sauce atop hot vermicelli and sprinkle with Parmesan cheese.
