Spice Rubbed Turkey with Mango Salsa

Ingredients

1-1/2 tbsp ancho chile powder

1 tbsp ground coriander

1-1/2 tsp light brown sugar

1-1/2 tsp ground ginger

1 tsp garlic powder

1 tsp onion powder

1 tsp kosher salt

1 tsp ground black pepper

1 tsp ground cinnamon

1 tsp ground allspice

1/2 tsp ground cloves

1 12-lb WHOLE TURKEY, fresh or thawed

As needed vegetable oil

3 green onions

4 tbsp canola oil, divided

As needed salt and freshly ground black pepper

4 Large ripe mangos, peeled, pitted and finely diced

1 Medium jalapeno pepper, seeded and finely diced

3 tbsp fresh lime juice

3 tbsp fresh cilantro, well cleaned and chopped

Directions


 



1. SPICE RUB



Combine chile powder, coriander, sugar, ginger, garlic and onion powders, salt, pepper, cinnamon, allspice and cloves. Seal tightly and reserve.




2. TURKEY



Prepare grill for cooking by the indirect heat method.


Remove giblets and neck from neck and body cavities; drain juices and pat turkey dry with paper towels. Turn wings back to hold neck skin in place. Un-tuck legs. Loosen skin over breast and legs of turkey by gently sliding fingertips under skin. Using fingertips, rub flesh with 2 tablespoons Spice Rub. Return legs to the tucked position. Brush turkey, including backside with vegetable oil.


Place turkey, breast side up, on cooking grate over drip pan. Cover grill and cook turkey in an internal thigh temperature of 175 degrees F, about 2-1/4 to 2-3/4 hours.




3. MANGO SALSA



Brush onions with 1-tablespoon canola oil and season with salt and pepper. Grill 2 minutes on each side. Remove and thinly slice.


Place mangos, onions, jalapeno, lime juice and remaining 3-tablespoons oil in a large bowl and gently mix. Season with salt and pepper and fold in cilantro.


Let stand at room temperature 30 minutes before serving.




4. SERVICE



When turkey is done, remove from grill and let stand 15 minutes before carving.


Serve about 6-ounces sliced turkey with the Mango Salsa.
