1 c smooth peanut butter
1/4 c soy sauce
1 tbsp hoisin sauce
1/4 c Asian sesame oil
2 tbsp rice vinegar
2 tbsp finely chopped garlic
2 tbsp peeled and grated fresh gingerroot
1 tsp red pepper flakes
2 tbsp fresh lime juice
1/2 c water
2-1/2 lbs angel hair pasta
6-1/4 lbs MESQUITE SMOKED TURKEY BREAST, skinned and cut into strips, chilled
1 lb red bell pepper, seeded and cut into strips, chilled
3 lbs snow peas, cooked, drained and chilled
3/4 lb celery, cut on the bias
As needed for garnish scallions, chopped
As needed for garnish fresh cilantro sprigs
In a food processor, combine peanut butter, soy and hoisin sauces, sesame oil, vinegar, garlic, gingerroot, pepper flakes, lime juice and water. Process until smooth.
Cook pasta until al dente; drain. Rinse pasta under cold water, drain and toss with peanut dressing. Cover and chill.
Toss pasta with turkey, peppers, peas and celery. Cover and chill.
Garnish with scallions and cilantro.
