1-1/2 lbs onions, chopped
1 tbsp garlic, minced
1/4 c canola oil
6 lbs GROUND TURKEY
1 Gallon canned diced tomatoes in juice
6 c canned kidney beans, drained well
1 lb pitted ripe olives, sliced and drained
1 lb tomato paste
1-1/2 c canned green chiles, diced
3/4 c canned jalapeno peppers, chopped
1/3 c chili powder
2 tsp dried oregano
1 tbsp ground cumin
Salt and freshly ground black pepper To taste
Heat oil in a stockpot. Add onion and garlic to hot oil and sauté for about 5 minutes or until tender.
Add ground turkey and cook until turkey is browned, breaking turkey into small pieces. Drain any excess drippings.
Add tomatoes and juice, beans, olives, tomato paste, chiles, jalapenos, chili powder, oregano, and cumin. Add salt and pepper to taste.
Bring to a boil, simmer 25-35 minutes or until desired consistency.
Portion and serve, using a 12-ounce ladle.
