Spinach Turkey Salad with Fruit



1/4 c red currant jelly

3 tbsp red wine vinegar

8 c spinach leaves, washed, drained, torn and chilled

8 oz COOKED TURKEY, chopped

1 c strawberries, washed, drained, sliced and chilled

1 (11-Ooz) can Mandarin oranges, well drained

3 Each green onions, chopped



Combine jelly and vinegar in saucepan and cook over low heat, stirring constantly, for a couple of minutes until smooth. Chill in freezer for 10 minutes.

In a large salad bowl, combine spinach leaves, chopped turkey, berries, oranges and green onions.

Pour dressing over the mixture and toss. Serve immediately.
