Starburst Turkey Salad



2-1/2 lbs BONELESS TURKEY BREAST, cooked, skin removed & diced (1/2-inch cubes)

1 c mayonnaise

1/2 c sour cream

4 Stalks celery, diced into small pieces

2 Large tomatoes, seeded and diced

2/3 c pecans, chopped and toasted

1-1/2 tsp dried tarragon

1/2 tsp salt

1/2 tsp ground pepper

8 1-oz pita pockets

3 Small Heads Bibb lettuce, washed and chilled

1 Large yellow pepper, seeded and julienned



In a large bowl, combine cooked turkey, mayonnaise, sour cream, celery, tomatoes, pecans, tarragon, salt and pepper; mix well.

Cut an X in the top of each pita pockets.

Fold back cut sections and line pita with lettuce leves and then fill with turkey salad. Garnish with yellow pepper strips.
