2 lbs GROUND TURKEY
3 oz frozen unsalted butter
3 oz Parmesan cheese
2 tsp ground cumin
4 oz cooked and well-drained spinach
4 oz goat cheese
Olive oil As needed
Salt and freshly ground black pepper To Taste
4 Brioche buns, toasted
Caramelized onions As needed
French fries As needed
Place ground turkey in a large mixing bowl. Coarsely grate frozen butter and Parmesan into bowl. Sprinkle mixture with cumin.
Working quickly, gently incorporate all ingredients together. Portion mixture into 4 balls. Cover and set aside.
Puree well-drained spinach with goat cheese, salt and pepper.
Make a depression in each turkey patty and fill each with about 2 ounces spinach mixture. Encase spinach mixture with turkey, forming a ball. Gently shape each into a turkey patty. Cover and hold for service in the refrigerator.
Per Order: Heat olive oil in a heavy oven-proof skillet and place turkey burger in hot pan. Cook in a preheated 400 degree F oven for about 8 minutes per side or until the internal temperature reaches 165 degrees F.
Place each turkey burger on brioche bun. Top with caramelized onions.
Serve with French fries.
