2 tbsp vegetable oil
2 lbs TURKEY HAM, cubed
6 lbs sweet potatoes, peeled and cubed
2 c onions, chopped
2 Gallons TURKEY BROTH
2 c carrots, thinly sliced
2 c celery, thinly sliced
1 tbsp garlic powder
1 tbsp dried thyme, crushed
3 c frozen peas
1 lb pasteurized process cheese spread, cubed
In a large nonstick stock pot, heat oil. Quickly brown turkey ham.
Add sweet potatoes and onions, sauté 8 minutes or until onions are tender, stirring often.
Add turkey broth, carrots, celery, garlic and thyme. Bring to a boil; reduce heat and simmer 20 minutes, until vegetables are tender.
Add peas and cheese. Cook, stirring until cheese is melted and chowder is smooth.
Yields: 50 8-ounce portions.
