4 oz TURKEY CUTLET
As needed flour
2 oz clarified butter
3 oz brown sauce (Espagnole)
1/3 c button mushrooms, cleaned and sliced
2 oz Marsala wine
2 Slices Swiss cheese
Place turkey between two pieces of plastic wrap. Gently pound turkey to an even ¼-inch thickness-keeping cutlet in one piece.
Lightly dust turkey with flour.
Sauté turkey in 1-ounce butter, turning to brown both sides.
In another small pan, sauté sliced mushrooms in the remaining 1-ounce butter.
Remove pan from heat and add Marsala wine to sautéed mushrooms.
Reduce by half and add brown sauce. Bring to a boil while stirring.
Pour sauce mixture over turkey cutlet and top with 2 slices of Swiss cheese.
Place pan under preheated broiler and broil until the cheese is melted.
Remove turkey from the pan with a spatula and serve on a warmed dinner plate.
