Szechwan Style Turkey with Fried Orzo Pasta Cake

Ingredients

2 Fluid oz sesame oil

1 tbsp ginger, minced

1 tbsp garlic, minced

2 tbsp scallions

1 tbsp lemongrass, minced

1/2 tbsp serrano pepper, seeded and minced

1 c soy sauce

Sambal olek To Taste

Cornstarch As needed

1 Fluid oz sesame oil

2 Fluid oz olive oil

1 tbsp ginger, minced

1 tbsp garlic, minced

2 tbsp scallions

8 oz orzo pasta

24 Fluid oz lemongrass stock

4 oz mascarpone cheese

1/3 c scallions, sliced

Salt and pepper To Taste

Flour As needed

Olive oil As needed

1-1/2 lbs cornstarch

3 tbsp ground cinnamon

1-1/2 lbs BONELESS TURKEY BREAST, cut in 1/2 inch dice

2 tbsp lemongrass, minced

1 tbsp ginger, minced

1 tbsp serrano pepper, minced

1 tbsp garlic, minced

2 tbsp soy sauce

1/4 c rice wine vinegar

1/4 c canola oil

Oil to fry As needed

4 wonton skins, fried in baskets

1 carrot, sliced

1 European cucumber, sliced

1 daikon, sliced

Chives, chopped fine As needed

Directions


 



ASIAN SAUCE



In 2 fluid ounces sesame oil, saute to aroma 1 tablespoon each ginger and garlic.  Add scallions, lemongrass and serrano pepper.


Add  1 cup soy sauce and sambal. Bring to boil and thicken to a heavy paste with cornstarch.


Keep hot for service.




ORZO PASTA CAKE



Heat 1 fluid ounce sesame and 2 fluid ounces olive oils together. Saute to aroma ginger, garlic and 2 tablespoons scallions. Add orzo and coat.


Cook risotto style with lemongrass stock.


Finish with mascarpone, 1/3 cup scallions, salt and pepper.


Lay out in a sheet pan, cool and cut.


At time of service, dredge in flour and saute in olive oil.




TURKEY



Mix cornstarch and cinnamon together. Toss turkey cubes in cornstarch mixture.


Cover and hold, in refrigerator, for service.




LEMONGRASS VINAIGRETTE



Combine lemongrass, ginger, serrano, garlic, soy sauce and vinegar.


Emulsify with canola oil. Hold for service.




SERVICE



Deep fry turkey cubes until cooked throughout and golden brown.


Immediately toss cooked turkey in sauce and plate.


Toss carrot, cucumber and daikon in vinaigrette. Arrange on plate with fried wonton basket. Complete presentation with hot orzo pasta cake.
