1/3 c canola oil
2 tbsp red wine vinegar
1 tbsp Dijon mustard
1 Clove garlic, minced
2 tsp dried tarragon, OR 2 tbsp fresh, minced
1/2 tsp salt
1/4 tsp pepper
Whisk oil, wine vinegar, mustard, garlic, tarragon, salt and pepper together in a shallow dish.
Add turkey pieces, coating all surfaces. Cover, refrigerate and marinate 2 to 3 hours, turning occasionally.
When ready to cook turkey, drain turkey pieces and discard marinade.
