Tex-Mex Turkey Pizza Pancake



2-1/2 c cooked rice

2 eggs, beaten

2 tbsp margarine, melted

2 c COOKED TURKEY, shredded

1/2 c onion, thinly sliced

1 Jar (16 oz) chunky salsa, mild

1 Can (4 oz) black olives, drained, pitted & sliced

1 c non-fat Cheddar cheese, grated

1/4 c cilantro, washed, dried & chopped



In medium bowl combine rice, eggs and margarine. Place in a 12-inch, non-stick skillet and pat to an even thickness, ensuring the mixture extends to the skillet walls.

Over medium-high heat, cook mixture 2 to 3 minutes or until mixture begins to set. Do not stir. Reduce heat to low and cook 25 to 30 minutes, or until mixture looks dry over the top.

Over top of egg mixture, layer turkey, onion, salsa, olives, cheese and cilantro. Cover skillet and cook 10 to 12 minutes or until cheese has melted.
