Tex-Mex Turkey Potpie – Conventional Oven

Ingredients

1 lb BONELESS WHITE or DARK TURKEY MEAT, cubed

1 Package taco seasoning mix

2 tbsp flour

1 tbsp oil or margarine

1/2 c onion, chopped

1 Clove garlic, minced

1 Can (14-1/2 oz) stewed tomatoes

1 Package (8 oz) cornbread mix

1 c grated Cheddar cheese

1/3 c milk

1 egg, beaten

1 Can (4 oz) chopped green chilies

Directions


 



Dredge turkey cubes in combined taco seasoning mix and flour mixture. Reserve remaining mixture.


Heat oil in large skillet over medium heat. Sear turkey cubes in batches being careful not to burn. Remove.


Adding more oil to the skillet if necessary, saute onions and garlic. Stir in tomatoes (breaking up large pieces) and the remaining flour seasoning mixture. Add the turkey cubes and bring to a boil. Cover; reduce heat to low.


In a medium bowl, combine cornbread mix and cheese. In a separate bowl combine milk, egg and chilies; add milk mixture to cornbread mixture. Stir just until blended. Lightly oil a 9-X 9-inch pan. Pour in turkey mixture. Top with cornbread mixture.


Bake at 400 degrees F for 25 to 30 minutes or until cornbread is lightly browned and pulling away from edges of pan.
