Tex-Mex Turkey Potpie – Microwave Instructions

Ingredients

1 lb BONELESS WHITE or DARK TURKEY MEAT, cubed

1 Package taco seasoning mix

2 tbsp flour

1 tbsp oil or margarine

1/2 c onion, chopped

1 Clove garlic, minced

1 Can (14-1/2 oz) stewed tomatoes

1 Package (8 oz) cornbread mix

1 c grated cheddar cheese

1/3 c milk

1 Large egg, beaten

1 Can (4 oz) chopped green chilies

Directions


 



Dredge turkey cubes in combined taco seasoning mix and flour mixture. Reserve remaining mixture.


In an 8-inch square glass dish, combine onions, garlic and tomatoes. Stir in dredged turkey cubes and the remaining flour mixture. Cover with vented plastic wrap and cook on HIGH (100% power) 7 to 10 minutes or until turkey is tender. Stir halfway through cooking time.


In a medium bowl combine cornbread mix and cheese. In a separate bowl combine milk, egg and chilies; add milk mixture to cornbread mixture. Stir just until blended and pour over meat mixture.


Cook uncovered on HIGH (100% power) for 6 to 8 minutes, or until cornbread is no longer doughy. Allow to stand 5 minutes before serving.
