11 lbs TURKEY WINGS
3 c mild picante sauce
3 c catsup
2 c honey
2 tsp ground cumin
1-1/2 qt mild picante sauce
1-1/2 qt reduced-fat sour cream
Cut wings at the joints and save the wing tips to make stock.
Place wings, in a single layer, in a full size hotel pan.
Combine sauce ingredients and save 2 cups sauce. Pour remaining sauce over wings. Stir to coat all surfaces. Cover and marinate wings, at least, one hour.
Remove wings from marinade and discard marinade.
Transfer drained wings to a clean hotel pan and bake, uncovered, in a preheated 350 degree F convection oven or a 375 degree F conventional oven for 45 minutes. Drain fat.
Turn wings and brush with reserved marinade. Return to the oven and continue to bake until the wings are cooked through and the sauce is thick.
Combine and serve with hot turkey wings as a dipping sauce.
