Texas Turkey Kebabs

Ingredients

12-1/2 lbs TURKEY BREAST, skin removed and cut into 1-inch cubes

2 qt mild picante sauce

2 c Italian dressing

17 Medium onions, (preferred Texas or other sweet variety) each cut into 6 wedges each

4 lbs sweet bell peppers, seeds removed and cut into 1-inch pieces

13 (8-inch) zucchini, cut in 1-inch pieces

Cut turkey into 1-inch cubes. Place, in a single layer, in full sized sheet pans.


Combine picante sauce and Italian dressing. Reserve 4 cups marinade to pour over kebabs during last stage of baking. Refrigerate reserved marinade.


Pour remaining 6 cups marinade over turkey. Stir well to coat all surfaces with marinade. Cover and marinate in the refrigerator for 4 to 5 hours.


Drain poultry and discard the 6 cups marinade. Alternating 4 ounces cubed turkey with vegetables, thread ingredients onto skewers.


Bake in a 350 degree F convection oven for about 20 minutes OR a conventional 400 degree F oven for 30 minutes. Turkey should be brown.


Pour reserved marinade over kebabs. Cover pan tightly with foil and bake in a conventional oven setting of 400 degrees F or until the turkey reaches an internal temperature of 165 degrees F.
