We packed an incredible amount of flavor into these little wraps that are as easy to put together as they are delicious. They’ll bring your guests back to the table for seconds or even thirds. Ingredients

FOR MEATBALLS

1 ½ lb 93% lean ground turkey

⅔ c panko bread crumbs

1 small shallot, minced

2 cloves of garlic, minced

1 egg, beaten

½ tsp salt

¼ tsp pepper

¼ c fresh parsley, finely chopped

1 tbsp extra virgin olive oil


FOR WRAPS

10 oz Thai peanut sauce, store bought

8 oz vermicelli or other rice noodles

1 head butter lettuce, washed and leaves separated

Optional toppings: shredded carrots, shredded cabbage, thinly sliced cucumber, scallions, limes, avocado, etc.

Directions

In a large bowl, gently mix the turkey, bread crumbs, shallot, egg, salt, pepper and parsley by hand until combined. Shape mixture into eighteen 1 1/2 inch meatballs.

Heat olive oil in a large non-stick skillet over medium high heat. Add the meatballs, flipping occasionally to make sure all sides are golden brown. Use a meat thermometer to ensure they reach the safe internal temperature of 165°F. Transfer to a paper towel-lined plate when they are done.

Cook rice noodles according to package directions, rinse under cold water and drain.

To serve, place meatballs, cold noodles, lettuce and Thai peanut sauce on a platter with your preferred toppings. Guests can easily build their own wraps and enjoy.
