Ingredients

Vegetable cooking spray As needed

6 oz egg whites

3 oz PULLED or COOKED DICED TURKEY

1/2 oz whole baby spinach leaves

1/4 oz onion, diced

1 oz Feta cheese, crumbled

1/2-oz tomato, diced

3 sliced tomatoes

1 English muffin, split and toasted

Directions


 



Spray an omelet pan with vegetable spray. Heat pan and add egg whites.


Set aside a sprinkling of Feta, diced tomato and spinach leaves for the omelet topping. Sprinkle on remaining ingredients, one at a time, to half of the omelet, ensuring the ingredients are evenly distributed.


When the omelet begins to set up, work with a rubber spatula by lifting the closest edge and tilting forward, allowing the eggs to run under the omelet. Repeat.


Place in melter to finish cooking. When complete, fold in half.


Top with spinach, Feta cheese and diced tomatoes.


Serve with tomato slices and toasted English muffin.
