2 c COOKED TURKEY, diced
1 c frozen mixed vegetables, thawed
1/4 tsp salt
1/4 tsp pepper
1 10-oz Can low-fat cream of mushroom or cream of potato soup
3/4 c skim milk
1 tbsp light mayonnaise
2 flat, unbaked prepared pie crusts, room temperature
Mix turkey, vegetables, salt, pepper, soup, milk and mayonnaise together in a medium bowl.
Fit one unbaked pie crust into a 9-inch pie plate, pressing to make a firm, even crust.
Pour turkey mixture into pie shell.
Cover with second prepared pie shell and flute the edges, sealing the top crust to the bottom crust. Cut vents for steam. Place on a baking sheet.
Bake in a preheated 350 degree F. oven for 30-40 minutes until the crust is golden brown. Let stand for 10-15 minutes.
