Tipsy Turkey and Camembert Sandwich

1 c mayonnaise

1 c cranberries, rough chop

2 tbsp cranberry flavored vodka

3 medium tart red apples, such as Gala, cut in thin wedges

2 to 3 tbsp orange juice

2-1/4 lbs OVEN ROASTED TURKEY BREAST, skinless and sliced thin

1 (16-oz) loaf sourdough bread, sliced thin and toasted

1 lb French Camembert, sliced thin


Mix mayonnaise, cranberries and vodka together. Cover and hold for service in refrigerator.

Toss apple wedges and orange juice together, coating cut surfaces. Cover tightly and hold for service in refrigerator.

At service: spread thin layer of mayonnaise mixture on top side of each piece of toast. Layer with 3-ounces sliced turkey, 4 to 5 apple wedges and slices of Camembert.

Under a preheated broiler, warm sandwich just until cheese begins to melt, about 3 to 4 minutes.

Serve with fruit salad.
