Toast for Monte Cristo
60 slices homemade-style white bread, sliced 1/4-inch thick
26 large whole eggs
2-1/2 c whole milk
2 tbsp sugar
1/2 tsp nutmeg, freshly grated
15 oz Dijon mustard
5 lbs cooked turkey breast, thinly sliced
3-3/4 lbs Swiss cheese, sliced
10 oz mayonnaise
40 pieces leaf lettuce, washed and dried
22 tomatoes, sliced
For French toast: Blend eggs, milk, sugar, and nutmeg thoroughly. Dip each slice of bread briefly in egg mixture and cook on a 350 degree F. buttered grill for 3-4 minutes per side, or until golden brown. Transfer to a rack to await service. Hold warm until ready to use.
For each sandwich: Spread 2 slices of French toast with Dijon mustard. Top each toast slice with 2 ounces of turkey and 1-1/2 ounces cheese. Broil all to melt cheese.
Top each broiled section with 1 piece of lettuce and 3 slices of tomato and stack on top of each other.
Spread the third slice of toast with mayonnaise. Finish with third toast slice, mayonnaise side down. Place a frilled toothpick in 2 opposite corners and slice sandwich in half diagonally to serve.
