Turkey and Apple Sausage Patties



3 lbs GROUND TURKEY (both light and dark meat)

4 Medium tart apples, peeled, cored, grated and squeezed of excess liquid

1/2 c chopped flat-leaf parsley

1/3 c finely chopped fresh sage

2-1/2 tsp salt

1 tsp ground black pepper

1 tsp freshly ground nutmeg

4 Large eggs, beaten

As needed canola oil


Combine turkey, apples, parsley, sage, salt, pepper, nutmeg and eggs in a large bowl.

Portion sausage mixture into 3-ounce patties to yield 16 sausage patties. Cover and refrigerate for several hours to allow the flavors to permeate.

Per order: lightly brush griddle with oil and preheat over moderate heat until hot.

Brown sausage patties, about 3 minutes per side. Transfer patties to a sheet pan and bake in a preheated 350 degree oven until turkey is cooked through to an internal temperature of 165 degrees F, about 10 minutes.
