Turkey and Asparagus Turnovers



1/2 c unsalted butter

1/4 c flour

2 c milk, hot


12 oz asparagus tips

2 tbsp Madeira

Salt and freshly ground black pepper To taste

2 Sheets (10" X 15") puff pastry dough, thawed and cut into fourths

1 Large egg

2 tbsp water



Melt butter in a heavy-bottomed saucepan. Stir in flour and cook, stirring constantly, until the paste cooks and bubbles a bit, about 2 minutes. Add hot milk, continuing to stir as the sauce thickens. Bring it to a simmer.

Fold in turkey, asparagus, Madiera, salt and pepper. Heat well.

Place 1/2 cup filling at the top of each pastry quarter. Fold, crimping edges and piercing tops.

Place on baking sheet lined with parchment paper and brush with egg wash.

Bake in a preheated 350 degree F oven for 12-15 minutes or until golden brown.
