Turkey and Bacon Rolls with Mango Chutney

Ingredients

2 c olive oil

3 oz Dijon mustard

3 c white wine, dry

1 tsp salt and white pepper mixture

6-1/2 lbs TURKEY CUBES, 3/4-inch by 3/4-inch

5-1/2 lbs TURKEY BACON, lean, sliced

3-1/4 lbs mango chutney, prepared

1 Bunch parsley

Directions


 



Mix oil, mustard and wine in a bowl. Season with salt and white pepper. Add turkey and marinade for 30 minutes.


Cut each bacon slice in half. Roll each turkey cube in bacon. Hold together with toothpick.


For service, place 5 rolls on half sheet pan and bake in preheated convection oven at 350 degrees F for 8-10 minutes.


Remove from oven and brush with mango chutney. Bake for 5-7 more minutes, until bacon is crisp.


Garnish with parsley sprig.


Yield: 50 appetizer servings at 5 rolls per portion.
