Ingredients

2 (15-oz) cans black beans, rinsed and drained, DIVIDED

1 lb LEAN GROUND TURKEY

1 Medium green pepper, seeds removed and chopped

1 Small onion, chopped

1 (15-oz) can enchilada sauce, DIVIDED

1 c (4-oz) shredded reduced-fat Mexican cheese blend, DIVIDED

8 (8-Inch) Whole wheat tortillas, warmed

Nonstick cooking spray As needed

Directions

In a large bowl, mash 1 can black beans; set aside.

In a large nonstick skillet, cook ground turkey, pepper and onion over medium heat until turkey is no longer pink.

Add the mashed beans, remaining beans, half the enchilada sauce and 1/2 cup cheese. Heat through.

Place 2/3 cup of turkey mixture down the center of each tortilla.

Roll up tightly and place seam side down in two 11-inches X 7-inches baking dishes coated with cooking spray.

Pour remaining enchilada sauce over the top.

Sprinkle with remaining cheese.

Bake, uncovered, in a preheated 425 degree F oven for 15-20 minutes or until heated through.
