Turkey and Blue Cheese Salad

1/4 c vegetable oil

3 tbsp cider vinegar

1 tbsp sweet onion, minced

1 tsp Dijon mustard

1/2 tsp sugar

To Taste salt and pepper

1 oz watercress

4 oz MESQUITE SMOKED TURKEY BREAST, skinless and chopped

1-1/2 oz tart apples, sliced thin

1 oz pecan halves, toasted

1/2 oz blue cheese, crumbled


Whisk together vegetable oil, vinegar, onion, mustard and sugar to blend. Season to taste with salt and pepper.

Lay watercress on a chilled entrée plate and place turkey evenly atop watercress.

Layer apples, pecans and cheese atop turkey.

Serve with reserved vinaigrette. Offer corn sticks or muffins as an accompaniment.
