Turkey and Cheddar Sub

Culinary Setting
Deli Turkey, Turkey Salami


2 c lower fat/light mayonnaise

1 c Italian salad dressing

50 (6-Inch) sub rolls, cut lengthwise

2 lbs shredded iceberg lettuce

6-1/4 lbs TURKEY BREAST, sliced thin

1-2/3 lbs TURKEY SALAMI, shaved very thin

2-1/3 lbs mild Cheddar cheese, sliced thin into 50 (3/4 oz) slices

7 lbs tomatoes washed, cored and cut into thin slices



Mix mayonnaise and salad dressing together until well blended.

Spread mayonnaise mixture onto both cut surfaces of each sub roll.

Sprinkle lettuce on the bottom half of each roll. Evenly distribute 2 ounces sliced turkey, 1/2 ounce sliced salami, 3/4 ounce sliced cheese and sliced tomatoes on rolls.

Cover with top half of the roll.
