Turkey and Cheese Biscuit Entree


3 oz cream cheese, softened

2 c COOKED TURKEY, cubed

1/4 c shredded sharp Cheddar cheese

1 tsp chopped chives

1/4 c chopped spinach, cooked and well drained

3/4 tsp lemon-pepper seasonings

1 tbsp milk

1 tbsp diced pimientos

1 c all purpose flour

2 tbsp baking powder

1/4 tsp salt

1/4 c cold margarine, cut into 1-inch pieces

1/3 c cold milk

1/2 c cracker crumbs




Combine cream cheese, cooked turkey, Cheddar, chives, spinach, lemon-pepper, milk and pimientos. Mix well, cover and chill.


Combine flour, baking powder and salt. Cut in margarine until the mixture is crumbly. With a fork, gently blend in milk.

Turn onto a lightly floured surface and knead a few times. Roll out to an even thickness and cut out 3-inch circles.


Preheat oven to 350 degrees F. Spoon 1/4 cup turkey mixture onto center of each biscuit. Pull corners of dough to the center of the mixture.

Place on a lightly greased or parchment paper lined baking sheet.

Sprinkle with cracker crumbs.

Bake for 18-20 minutes or until a golden brown.
