40 Slices white bread, firm, sliced 1/4-inch thick, crusts removed
15 oz mint mayonnaise, recipe below
1-1/4 lbs cucumbers, thinly sliced
30 oz COOKED TURKEY BREAST, thinly sliced
Mint Mayonnaise
1-1/2 c mayonnaise
1/2 c fresh mint, chopped
1/3 c sour cream
4 tsp fresh lemon juice
1/2 tsp salt
3/4 tsp sugar
For mint mayonnaise: Blend mayonnaise, mint, sour cream, lemon juice, salt and sugar thoroughly. Cover and refrigerate until ready to use. Best if used the same day it is made. Portion is 3/4 ounce for each sandwich.
For each sandwich: Spread one side of each of two slices of bread with mint mayonnaise. Layer cucumbers on one slice and top with 1-1/2 ounces of turkey, folded to fit entirely within the edges of the bread.
Place second slice of bread on top, mayonnaise side down and press firmly. Cut in quarters to serve.
