Turkey and Leek Soup

Ingredients

3 qt water

1-1/2 c barley

1 tsp salt

4 Large leeks, well rinsed and chopped

4 c COOKED TURKEY, chopped

28 oz TURKEY BROTH

4 tsp hot pepper sauce

1 c prunes, chopped

1/2 c fresh parsley, chopped

Crusty French bread As needed

Directions


 



In a large pan, over high heat, combine water, barley and salt; bring to boil. Reduce heat to low; cover and simmer 1 hour or until barley is tender.


Add leeks, turkey, broth, pepper sauce, prunes and parsley; bring to boil over high heat.


Reduce heat to low; cover and simmer 10 minutes, stirring occasionally.


Serve hot with French bread.
