1/2 c vegetable oil
1/4 c white wine vinegar
1/2 tsp garlic powder
White pepper Dash
3/4 c carrot, chopped
3/4 c celery, chopped
1/4 c onion, chopped
2 c rotini pasta, (or other small pasta), cooked and drained
1 c pitted black olives, drained & sliced
1 Package (8 oz) frozen artichoke hearts, thawed and well drained
3 c COOKED TURKEY, cubed
Leaf lettuce As needed
In small bowl, combine oil, vinegar, garlic powder and pepper.
In large bowl, combine carrot, celery, onion and rotini. Add oil mixture; toss to coat. Add olives, artichokes and turkey; toss gently. Cover and chill thoroughly.
To serve, spoon each portion onto lettuce leaves.
