3 oz MESQUITE SMOKED TURKEY BREAST
1 10-inch flour tortilla
2 oz Mozzarella cheese, shredded
1 oz goat cheese, crumbled
1 oz roasted red pepper strips, well drained
1 tbsp sweet corn kernels
Guacamole and salsa As needed
Cut deli turkey into julienne strips.
Place tortilla on a flat surface. Over bottom half of tortilla, sprinkle 1 ounce of Mozzarella and 1/2 ounce of goat cheese. Sprinkle turkey strips, pepper strips and corn over cheeses.
Sprinkle remaining cheeses on top and fold top half of tortilla over filling.
Place quesadilla on baking sheet and bake in a preheated 350 degree F oven for about 8 minutes or until cheese melts.
Cut into 4 wedges. Serve hot with guacamole and salsa.
