Turkey and Smoked Gouda Sandwich W/ Cranberry Apple Chutney



1/2 c honey

Zest of one lemon

3/4 c freshly squeezed lemon juice

1/2 c cider vinegar

1/4 c apple cider

1/4 tsp fresh ginger, peeled and grated

1/4 tsp cayenne pepper

1 c cranberries

4 Medium tart apples, peeled, cored and cut into 1-inch dice

1/3 c sweet onion, chopped

1/2 c golden raisins

1/4 tsp salt

8 Medium pita pockets, cut in half


1 lb smoked Gouda, sliced

Leaf lettuce, washed, dried and chilled As needed




Combine honey, lemon zest, lemon juice, vinegar, apple cider, ginger and cayenne in a medium saucepan.

Stir in cranberries, apples, onions, raisins and salt. Cover pan and boil over medium heat, stirring occasionally.

Simmer for about 20 minutes, until apples become tender. Remove from heat and allow mixture to cool to room temperature.

Cover and refrigerate for at least 24 hours.


Fill each pita pocket with 2-ounces of roasted sliced turkey breast, one ounce of smoked Gouda and a small piece of leaf lettuce.

For each portion, serve two pita pocket halves and 2-ounces of cranberry apple chutney.
