Turkey and Wild Mushroom Stew

Boneless Breast


3 lbs unsalted butter

1/3 c garlic, sliced

9 lbs button mushrooms, cleaned and sliced

9 lbs shiitake mushrooms, cleaned and sliced

9 lbs oyster mushrooms, cleaned and sliced

1 c fresh thyme, stemmed and chopped

1 c fresh parsley, stemmed and chopped

1 c fresh rosemary, stemmed and chopped

42 lbs TURKEY COMBO ROAST, cooked and sliced 1-inch thick

6 qt dry white wine

To taste salt and freshly ground black pepper

As needed Parmesan cheese, grated


Melt butter, add garlic and sauté until golden brown.

Add button, shiitake and oyster mushrooms, thyme, parsley and rosemary. Sauté until mushrooms are tender and liquid has evaporated.

Stir in turkey slices and wine. Season with salt and pepper to taste. Gently simmer until flavors blend.

Adjust seasonings as necessary. Sprinkle with Parmesan cheese.
