5 lbs cheese-filled tortellini, cooked and chilled
1 lb, 14 oz COOKED TURKEY BREAST, julienned
1 lb, 14 oz TURKEY HAM, julienned
6-1/2 oz TURKEY PEPPERONI, sliced and halved
10 oz green bell pepper, cut into 1/4-inch by 1-inch strips
10 oz roasted red pepper, cut into 1/4-inch by 1-inch strips
1 lb Provolone cheese, 1/2-inch cubed
2 c Parmesan cheese, grated
3-1/2 c Italian dressing, prepared
20 Pieces leaf lettuce, washed and dried
80 qters marinated artichoke hearts, drained
60 Each cherry tomatoes
20 Each fresh basil leaves
Blend tortellini, turkey breast, turkey ham, pepperoni, green peppers, roasted red peppers, cheeses, and dressing together. Marinate, covered and refrigerated, at least 1/2 hour or up to 6 hours.
For each serving: Line a plate with leaf lettuce and place 12 ounces of tortellini mixture on top. Arrange 4 artichoke heart pieces and 3 cherry tomatoes (cut in half) around plate. Garnish with basil leaves. Serve immediately or hold covered and refrigerated for up to 3 hours.
