40 Slices whole wheat bread, toasted
10 oz mayonnaise
7 oz alfalfa sprouts, washed and drained
2-1/2 lbs avocado, thinly sliced (about 10 avocados)
7 oz red onion, thinly sliced
3-3/4 lbs TURKEY BREAST, sliced
1-1/4 lbs Cheddar cheese, sliced
60 Slices tomato (about 10 tomatoes)
20 Pieces leaf lettuce, washed, drained and crisp
For each sandwich: Spread mayonnaise evenly on both pieces of toast. On first slice, layer sprouts, avocado, onion, 3 ounces turkey and 1 ounce cheese. Broil to melt cheese.
Top with 3 tomato slices, lettuce and 2nd slice of toast. Place frilled toothpicks in opposite corners and cut in half, diagonally, to serve.
