3 c mayonnaise
1 c sun-dried tomatoes in oil, chopped
1 tbsp onion powder
2 tsp white wine vinegar
1/2 tsp salt
1-1/2 tsp ground black pepper
3 qt cooked rice, cooled to room temperature
1 lb TURKEY BACON, coarsely chopped and cooked
1-1/2 lbs tomato, diced
1 c green onion tops, chopped
1-1/2 lbs COOKED TURKEY, thinly sliced
1-1/2 lbs iceberg lettuce, shredded
24 (10-inch) flour tortillas, warmed
Combine mayonnaise, sun-dried tomatoes, onion powder, vinegar, salt and pepper in a large bowl. Mix well.
Add rice, bacon, fresh tomatoes and green onion tops to mayonnaise mixture, stirring well to combine.
For each sandwich, place 1-ounce sliced turkey and 1-ounce lettuce down center of tortilla. Top with 3/4 cup rice mixture. Roll up.
Slice on the diagonal.
