3/4 c barbecue sauce
1/4 c light mayonnaise
1/4 c light sour cream
12 oz whole grain pasta. cooked, drained and cooled
1-1/2 lbs OVEN ROASTED TURKEY BREAST, chopped
1 c grilled corn kernels, cut off the cob
1 Medium zucchini, sliced, grilled and chopped
4 Roasted/grilled red peppers, ribs and seeds removed and chopped
1 c chopped fresh spinach
1/2 Medium to large green pepper, seeded and chopped fine
3 oz Feta cheese, crumbled
2 green onions
6 to 12 crisp lettuce leaves
As needed chopped parsley
Tangy Dressing: Whip dressing ingredients together. Cover and chill while preparing salad.
Turkey Salad: In a large bowl, mix first nine salad ingredients together. Add dressing and stir to coat all ingredients. Cover and chill, at least, two hours.
Portion salad onto lettuce leaves and garnish with parsley.
