Turkey, Beans ‘n Greens Salad



1/4 c olive oil

1 green bell pepper, seeded and diced

1 red bell pepper, seeded and diced

2 c COOKED TURKEY, cubed

1 red ripe tomato, diced

1 Clove garlic, minced

2 tbsp green onions, thinly sliced

1 c green beans, cut in 1-inch pieces, cooked and drained

3 tbsp balsamic vinegar

1 19-oz Can chickpeas, rinsed and drained

Salt and freshly ground black pepper To taste

Fresh greens As needed



In a large saute pan, heat oil. Stir-fry peppers. Add turkey, tomato, garlic and onion; continue to stir-fry for 1-2 minutes.

Add green beans, vinegar and chickpeas. Combine well.

Place in a shallow bowl, season with salt and pepper to taste. Garnish with fresh greens.
