1 lb TURKEY BREAKFAST SAUSAGE
Vegetable cooking spray
4 Slices whole wheat bread, crusts removed
2 Can (4 oz) green chilies, undrained
1 c grated reduced-fat Cheddar cheese
2 Packages (8 oz each) frozen egg substitute, defrosted
1 Clove garlic, minced
1 tsp dried oregano
1/2 tsp pepper
1/4 tsp dry mustard
In large non-stick skillet, over medium-high heat, saute turkey sausage 5 to 7 minutes or until turkey is no longer pink.
In 8-inch square baking dish, lightly coated with vegetable cooking spray, arrange bread slices in one even layer. Sprinkle turkey sausage over bread. Top with chilies and cheese.
In medium bowl combine egg substitute, garlic, oregano, pepper and dry mustard. Slowly pour over casserole. Cover and refrigerate 8 hours or overnight.
Place casserole, uncovered, on bottom rack of oven. Bake at 325 degrees F. 1-1/4 hours or until a knife inserted in center of mixture comes out clean. Remove from oven and allow to set 5 minutes. To serve, slice into 6 squares.
