Turkey Breast with Shrimp Butter and Fettuccine



8 oz shrimp, cooked, shelled, deveined and minced

1/4 tsp paprika

3-1/2 tbsp fresh lemon juice

5 tbsp parsley, chopped

Salt and pepper To Taste

1-1/4 lbs unsalted butter, softened

5-1/4 lbs COOKED TURKEY BREAST, julienned

4 lbs, 3 oz fettuccine noodles, cooked and warm

20 Each lemon wedges

20 Each herb sprigs, tarragon, thyme, parsley, etc.



Blend shrimp, paprika, lemon juice, parsley, salt and pepper into butter thoroughy. Transfer to a sheet of waxed or parchment paper and roll up forming a log 1-1/2 inches in diameter. Twist ends closed and refrigerate until firm. Keep refrigerated until ready to serve.

Heat turkey strips, covered in steamer for 15 minutes.

Toss hot turkey breast strips with hot pasta and shrimp butter just before serving. (If preparing single servings, use 1 ounce of butter, cut from log.)

Garnish each plate with a lemon wedge and fresh herb sprigs.
