Turkey Burgers with Mushroom Sauce



1/2 c unsalted butter

1-1/2 c finely chopped onions

6 c cleaned and diced assorted fresh mushrooms

1 c all-purpose flour

2 qt whole milk

2 tsp dry mustard

1 tbsp dried thyme leaves

2 tsp salt

1 tsp freshly ground black pepper

12 Large eggs, beaten


4 c OR 8 oz soft bread crumbs

3 c minced onions

2 c whole milk

1 c low-sodium soy sauce

3 tbsp garlic powder

3 tbsp salt

2 tsp pepper

Nonstick cooking spray As needed


Mushroom Sauce

In a heavy sauté pan, melt butter. Sauté onions and mushrooms until soft and liquid evaporates.

Blend in flour and cook until golden.

Stir in milk, herbs and seasonings. Cook, stirring until sauce boils. Reduce heat and simmer 2 minutes.

Hold for service.

Assemble Turkey Burgers

Gently combine all ingredients. Shape into 100 oval (3-5/8 ounce) patties.

Baking and Service

Lightly spray hotel pans with nonstick cooking spray. Place oval patties on pans.

Bake in preheated 375 degree F oven until internal temperature reaches 165 degrees F, about 27-30 minutes.

Spoon warm mushroom sauce atop turkey burgers and serve immediately.
