We’re upgrading a classic Italian salad to a Turkey Caprese Sandwich in this delizioso recipe! Stacked tall with fresh toppings, sliced deli turkey gives this sandwich a little extra protein boost.

Ingredients

1 fresh baguette

1/2 c pesto, store bought works great

2 medium tomatoes, sliced thin

8 oz fresh mozzarella, sliced thin

8 oz deli-sliced roasted turkey

1 c arugula

4 tbsp balsamic reduction (optional)

Directions

On a cutting board, cut the baguette in half lengthwise using a bread knife.

Place the halves cut side up and spread pesto onto both sides.

Distribute the arugula over the bottom half of the baguette.

Layer the mozzarella and then the tomato on top of the arugula.

Top it all off with the turkey.

Drizzle with the balsamic reduction. (optional)

Top with the other half of the baguette.

Using a bread knife, slice the sandwich into four equal portions.


Wrap to take on the go…

Cut a sheet of parchment or deli paper that is about one and a half times the length of each sandwich, place it vertically in front of you.

Place the sandwich diagonally across the paper, about three inches from one of the corners. Lift that corner up and over the baguette.

Roll the sandwich in the paper towards the opposite corner folding in the sides as you go.

With everything tucked, use a small piece of tape to keep the seal together for traveling.
