2 lbs ricotta cheese
8 Each eggs
1/2 c all-purpose flour
1 tbsp salt
1/2 tsp garlic powder
1-1/3 c green onion, chopped
1 c fresh parsley, chopped
3 tbsp brown mustard
1 lb PULLED TURKEY, 3/8-inch diced
As needed oil for deep frying
Blend ricotta briefly, until softened. Add eggs, one at a time and beat well. Add flour, salt, and garlic powder, and blend thoroughly.
Fold in green onion, parsley, mustard, and turkey.
Heat at least 1-1/2 inch oil to approximately 375 degrees F. Drop rounded tablespoons of the turkey/cheese mixture into hot oil and fry until golden brown.
Drain on paper towels and serve hot.
